Although I am not a strict adherent to tradition, with this book, I want to provoke you into showing greater care for our traditional cuisine and the so-called Mediterranean diet. In other words, I want to take you back to the foods that our parents and ancestors cooked and ate. This is the cuisine of the Holy Mountain Athos, the cuisine that I learned to serve over a period of 33 years. The professionals call it healthy cuisine, Mediterranean, dietetic, et cetera, but I do not know what to call it. Give it whatever name you wish - Monastic cooking, Holy Mountain cuisine, or traditional. What is important is that it has been proven to be of lower triglycerides and cholesterol content, and that it helps decrease blood pressure, and reduces other harmful effects. More important of all however, I hope that the book you hold in your hands helps you to get even closer to those you love through cooking. Open up your homes, invite your friends, cook together, set the table, drink wine, and celebrate.

A hundred twenty six recipes, containing all the secrets of the macrobiotic diet, that the monks of Holy Mountain Athos have been following for centuries, revealed for the first time by Elder Epiphanios of Mylopotamos. The monks of Mount Athos have long been known for their quiet, austere lifestyle. A 10-year study has revealed extraordinarily low rates of cancer, heart disease and Alzheimer’s among the brotherhood.
