Greek Coffee

Greek coffee is such a popular drink in Greece that it has become a ritual occurring twice a day: the first cup is sipped during the morning, while the second cup is enjoyed following a comfortable afternoon siesta.

Prepared in a special pot named briki - "bree-kee" - Greek coffee is a very strong, rich brew which is served in demitasse cups and is enjoyed with a tall glass of cold water, Paximathia cookies (Greek Biscotti) and fruit preserves.

You don't need to go to Greece every time you want to enjoy a cup of Greek coffee; you can make the perfect cup right at home following these simple steps.


Choose your style: Strong or Sweet.

Greek coffee is generally made in three different ways:
Sketos (Bitter) - 1 heaping teaspoon of coffee, no sugar.
Metrios (Medium sweet) - 1 teaspoon of sugar and 1 heaping teaspoon of coffee.
Glykos (Sweet) - 2 teaspoons of sugar and 1 heaping teaspoon of coffee.



What you’ll need.

Greek coffee - Finely ground coffee.

Briki - Usually comes in 2, 4, and 6 demitasse cup sizes.

Demitasse cups - Small cups used to serve Greek coffee or espresso.

Water - Approximately 1/4 cup of cold water (for each cup of coffee).

Sugar - 1 or 2 teaspoons, depending on the style of coffee you'd like to make.



Directions.

  1. For each cup of Greek coffee measure 1 demitasse cup of cold water and pour into briki.
 
 
 
  1. Depending on the style you choose, add 1 heaping teaspoonful of Greek coffee and 1 teaspoon of sugar.

    Stir contents until Greek coffee is diluted. Do not stir again.

 
 
  1. Over medium-to-high heat bring briki to a boil.

    Once foam begins to rise to the top of the briki, immediately remove from heat. You do not want the foam to bubble.*

    Careful, it's hot!

* During this step keep an eye on the briki as coffee foam will rise quickly.
 
 
  1. Pour a little coffee in each demitasse cup to distribute the foam evenly.*

    Serve with a tall glass of water and enjoy!

 

* Never stir Greek coffee once it has been made and served.
  Do not drink the sediment settled on the bottom of the cup.

Remember, sip slowly.
