Bean Soup
with sausage and Thrumba olives

Ingredients
1 lb white beans
2 ripe tomatoes, finely chopped
2 onions, finely chopped
1/2 tbsp. celery, coarsely chopped
2 tbsp. Thrumba olives
2 carrots, thinly sliced
Salt & pepper
7 oz (200 g) country sausages, thickly sliced

Preparation
Soak beans overnight.

Cooking
Rinse beans, then submerge in a pot of water (about 1 liter).
Bring to a boil over medium heat, then add tomatoes, onion, celery, olives, carrots, salt, and pepper.
Let cook for 40 minutes.
Add sausage and cook for 10 more minutes.
Serve hot.
